QUINOA TOMATO CUCUMBER SALAD WITH A LEMONY ITALIAN VINAIGRETTEDifficulty: Easy
- Salad Ingredients
1 cup cooked quinoa
Chopped: red onions, tomatoes, cucumber, parsley (honestly add any vegetables or herbs you want!)
Feta cheese (or try parmesan or mozzarella)
- Lemony Italian Vinaigrette
1/4 cup olive oil
2 tablespoons apple cider vinegar or red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon Italian seasoning
Pinch of salt and black pepper
- In a small bowl, whisk all vinaigrette ingredients together.
- Combine salad ingredients with the vinaigrette and top with feta cheese.
