QUINOA TOMATO CUCUMBER SALAD WITH A LEMONY ITALIAN VINAIGRETTE

Ingredients

  • Salad Ingredients
  • 1 cup cooked quinoa

  • Chopped: red onions, tomatoes, cucumber, parsley (honestly add any vegetables or herbs you want!)

  • Feta cheese (or try parmesan or mozzarella)

  • Lemony Italian Vinaigrette
  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar or red wine vinegar

  • 1 tablespoon fresh lemon juice

  • 1/2 teaspoon Italian seasoning

  • Pinch of salt and black pepper

Directions

  • In a small bowl, whisk all vinaigrette ingredients together.
  • Combine salad ingredients with the vinaigrette and top with feta cheese.
