Filipino style grilled chicken.

Ingredients

  • 2 lbs chicken leg quarters

  • 2 Tbsp ginger, minced

  • 2 Tbsp garlic, minced

  • 2 lemongrass stalks, chopped

  • 1 cup coconut vinegar

  • ½ cup calamansi (or lemon) juice

  • ¼ cup brown sugar

  • 1 cup Sprite (lemon-lime soda)

  • ½ Tbsp black pepper

  • Basting Sauce:
  • ¼ cup annatto oil

  • 2 Tbsp butter, melted

  • 2 tsp salt

  • 1 Tbsp calamansi (or lemon) juice

Directions

  • Combine all marinade ingredients (garlic, ginger, lemongrass, coconut vinegar, calamansi (or lemon) juice, brown sugar, Sprite, black pepper) in a freezer bag or large bowl
  • Add chicken to marinade, set aside to marinate for 3-4 hours.
  • In air fryer start with the chicken skin side down, baste and air fry for 10 min. Turn, over and baste skin side up, air fry for 10 minutes. Continue 3-4 times until internal cook temperature is 165-175° F.
