Grilled (or air fried) chicken, Filipino style. Mmm yum!!!

Filipino style grilled chicken.
2 lbs chicken leg quarters
2 Tbsp ginger, minced
2 Tbsp garlic, minced
2 lemongrass stalks, chopped
1 cup coconut vinegar
½ cup calamansi (or lemon) juice
¼ cup brown sugar
1 cup Sprite (lemon-lime soda)
½ Tbsp black pepper
- Basting Sauce:
¼ cup annatto oil
2 Tbsp butter, melted
2 tsp salt
1 Tbsp calamansi (or lemon) juice
- Combine all marinade ingredients (garlic, ginger, lemongrass, coconut vinegar, calamansi (or lemon) juice, brown sugar, Sprite, black pepper) in a freezer bag or large bowl
- Add chicken to marinade, set aside to marinate for 3-4 hours.
- In air fryer start with the chicken skin side down, baste and air fry for 10 min. Turn, over and baste skin side up, air fry for 10 minutes. Continue 3-4 times until internal cook temperature is 165-175° F.
