So… what is binagoongan?? I mean besides super delicious. According to Wikipedia: Binagoongan is a Filipino cooking process consisting of vegetables or meat sautéed or braised in bagoong alamang (fermented shrimp paste), garlic, black peppercorns, and bay leaves. Some recipes also add pineapples, chilis, or coconut cream to balance the flavors.

Binagoongan is a Filipino cooking process consisting of vegetables or meat sautéed or braised in bagoong alamang (fermented shrimp paste), garlic, black peppercorns, and bay leaves.

Ingredients

  • 2.5 lb pork, cubed

  • 8 cloves of garlic

  • 1 medium onion, diced

  • 1 tomato, diced

  • 2 medium eggplant, sliced diagonally

  • 4 Tbsp bagoong

  • 4 Tbsp vinegar

  • 2 tsp sugar

  • 2-3 bay leaves

  • 1/8 tsp freshly ground black pepper

  • 2 tbsp neutral oil

  • Water for boiling meat

  • ½ tsp red pepper flakes (optional)

Directions

  • Fry the eggplant until browned on both sides. Once cooked, set aside.
  • Brown pork pieces on all sides until light golden brown and fat has been rendered. Drain meat and set aside.
  • Sauté onions, garlic and tomato in rendered pork fat, cook until soft.
  • Once softened, add bagoong and red pepper flakes. Cook for 1 minute.
  • Pour vinegar and DO NOT STIR for about 10 minutes.
  • Add pork into the pot and cover with water and add the bay leaves. Bring water to boil then simmer until pork is fork tender – about 45 min to 1 hour.
  • Once meat is tender and sauce has reduced add in eggplant.
  • Serve with freshly cooked white rice.
